Chef Phil
Since his first job bussing tables at 16, Phil has worked every position in the restaurant industry.
Working his way up to server and bartender at national chain restaurants he turned his attention to fine dining where he gained his knowledge on high end service, wine, and global cuisine continuing years of experience in all areas of service and management.
With aspirations of cooking professionally since his youth Phil was finally inspired to move to the kitchen when he met his mentor Troy Guard. At Troy’s suggestion Phil set his foundation with a degree in culinary arts focusing on farm to table, sustainable, and biodynamic practices, all while interning with Chef Troy at his newly opened restaurant TAG. After graduating Phil remained with Troy and continued to grow and learn with the best cooks and chefs in Denver, and was selected to open two new concepts in the growing company. On a mission to build his own business Phil opened his first concept, Taco Bar, high end street tacos using duck, offal cuts, octopus and the like.
Phil, being the Texan he is, returned home to family and friends. He continued to explore and grow in Austin kitchens, most notably Swift’s Attic and Salt and Time, all while catering weddings, special events, backstage at concerts, and private dinners at the homes of Austin’s top business professionals, musicians, and pro athletes. The past two years have seen great growth for Phil with his catering concepts. His anchor client, a local software company, which he and his team provides lunches to 80 employees each week. The love he has of his craft keeps him motivated and pushes him to continue to learn and grow.
